Speculaas

Speculaas is a traditional spiced biscuit made from wheat flour, sugar, and butter, with cinnamon, nutmeg, and other spices. For people with gout, the biscuit itself is low in purines, so it won't directly push uric acid up as much as organ meats or shellfish would. However, the refined sugar and flour can cause a rapid insulin response, which may reduce uric acid excretion and lead to a spike in serum urate [1].

The fat content also matters. Many speculaas recipes use butter or palm oil, which are high in saturated fat. Excess saturated fat can impair insulin sensitivity and worsen gout risk factors like obesity and metabolic syndrome. Commercial brands often add extra sugar or syrups, increasing the total sugar load per serving [2].

That said, an occasional cookie — one or two pieces — is generally fine for most people with gout, provided the rest of the diet is controlled. Choose versions lower in added sugar, check the label for high-fructose corn syrup (rare in speculaas but possible), and always pair with plenty of water. Storing them in a tin helps reduce snacking triggers and supports portion control [3].

Practical tips: keep to 1–2 cookies (about 25–50 g) as an occasional treat, not a daily staple. If you have diabetes or insulin resistance alongside gout, be even more cautious with portions. A diet rich in vegetables, whole grains, and water remains the best baseline for managing uric acid levels.
