Kidney beans are a moderate-purine plant food; white rice is low in purines. Combined, they form a plant-based protein meal that can be part of a gout-friendly diet when consumed in reasonable portions and prepared without high-purine additions like meat stock or organ meat. However, because kidney beans contain moderate levels of purines (mainly adenine and hypoxanthine, which are more readily converted to uric acid than other plant purines), eating very large portions could modestly raise uric acid. Hydration and overall dietary patterns matter more than any single food. Rinsing canned beans reduces purine content slightly.
