Broccoli Casserole

Broccoli casseroles vary widely by recipe, but most are built around steamed broccoli florets folded into a rich cheese sauce made with butter, flour, milk or cream, and shredded cheddar, often topped with buttery breadcrumbs or crackers. Broccoli itself is an excellent choice for gout management: it is low in purines, supplies vitamin C (which may help lower uric acid), and adds fiber and antioxidants. Recipes like those from Allrecipes or EatingWell use these classic rich ingredients . The concern is the high saturated fat load from cheese, butter, and cream — typically delivering 28 g of fat and about 364 calories per cup in standard versions . Excess saturated fat can promote systemic inflammation and may impair kidney handling of uric acid over time, potentially raising flare risk. For a gout-friendly version, choose recipes that lighten the sauce — using reduced-fat cheese, olive oil instead of butter, or Greek yogurt for creaminess — and bulk up the broccoli-to-cheese ratio (see healthy adaptations like those from Healthy Delicious or Healthy Fitness Meals [3][1]). Watch portion sizes: enjoy a small serving as a side dish rather than a main course, and pair it with low-purine proteins like chicken or eggs. Homemade versions let you control sodium and fat; restaurant or frozen casseroles may conceal higher amounts of added sugars or sodium, so read labels carefully.
